With the exception of vitamin D, which can be produced by the skin when exposed to the sun, vitamins must be obtained from food because the body is unable to produce them. Vitamins are separated into two categories. Fat-soluble vitamins, which when taken in excess the body stores in the fat cells, and water-soluble vitamins, which are constantly flushed from the system. Unlike fat-soluble vitamins, water-soluble vitamins are easily lost during cooking and processing. The body does not store excess quantities of most water-soluble vitamins, so foods or supplements bearing them must be consumed frequently.
